Ingredients

  • 8 oz package Cream Cheese (softened)
  • 4 oz can Diced Green Chilies (mild or spicy, to preference)
  • 1 cup Cheddar Cheese (shredded)
  • 0.5 cup Red Onion (finely diced)
  • 0.5 cup Bell Pepper (diced, any color)
  • 3 tablespoons Sour Cream (for filling)
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 0.25 teaspoon Cayenne (to taste)
  • 1 cup Sour Cream
  • 0.5 cup Basil Pesto (for mixing with sour cream)

Instructions

  1. Preheat the oven to 350ºF and line a baking sheet with parchment paper.
  2. Combine the filling ingredients in a bowl and mix until creamy and smooth.
  3. Divide the filling mixture and spread it over the tortillas evenly.
  4. Roll up each tortilla tightly and slice at a 45-degree angle.
  5. Chop the rolled tortillas into five pieces, discarding the less filled ends.
  6. Arrange on the baking sheet and bake for 8 minutes.
  7. Broil the antojitos on high for an additional 5 minutes.
  8. Cool slightly before serving with basil pesto sour cream.
