  • 1 cup plain Greek yogurt
  • ¼ cup honey
  • 2 eggs
  • 1 tsp vanilla extract
  • ¼ cup coconut oil (melted and cooled)
  • 1 ½ cups peeled, diced apples (preferably Honeycrisp or Fuji)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
  2. In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, mix the Greek yogurt, honey, eggs, vanilla extract, and melted coconut oil until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not over-mix.
  5. Fold in the diced apples.
  6. Spoon the batter evenly into muffin cups, filling each about ¾ full.
  7. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
