Ingredients
- 1 cup old-fashioned rolled oats
- 1 cup boiling water
- 1½ cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- 1½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ½ cup unsalted butter, softened
- ½ cup brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups apples, peeled and chopped (Granny Smith or Honeycrisp)
- Optional: ½ cup chopped walnuts or pecans
- Optional toppings: cinnamon sugar, caramel drizzle, or powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish or line it with parchment paper.
- Combine oats and boiling water in a bowl. Let sit for 10–15 minutes to soften.
- In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Cream butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs and vanilla, mixing until smooth.
- Stir in the soaked oats until fully incorporated.
- Gradually add the dry ingredients, stirring until combined.
- Fold in chopped apples and nuts if using.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
- Cool slightly before serving.
- Dust with powdered sugar or drizzle with caramel, if desired.
