Ingredients
- 4 cups chopped apples (about 4–5 medium apples, Honeycrisp or Fuji recommended)
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 cup apple juice
- 1 box (1.75 oz) fruit pectin
- 2 cups granulated sugar
- 2 tablespoons fresh thyme leaves, chopped
- 1–2 sprigs fresh thyme (optional, for decoration)
Instructions
- Prepare the apples: Peel, core, and chop your apples into small, consistent pieces.
- Simmer the base: In a large saucepan or Dutch oven, combine the chopped apples, lemon juice, lemon zest, and apple juice. Cook over medium heat for 5 to 7 minutes until the apples soften. Stir occasionally.
- Add the pectin: Stir in the fruit pectin and increase the heat to bring the mixture to a full rolling boil. Keep stirring constantly for one minute.
- Add sugar and thyme: Add the sugar and chopped thyme leaves to the boiling mixture. Stir well and cook for another minute, maintaining a rolling boil.
- Skim foam and ladle into jars: Remove the pot from heat and skim off any foam. Carefully ladle the hot jam into sterilized jars, leaving about 1/4 inch of headspace.
- Process the jars (optional): For longer storage, process the sealed jars in a boiling water bath for 10 minutes. For short-term use, let the jars cool to room temperature and store in the refrigerator.
