- 16 oz. cremini mushrooms, stems removed and finely chopped
- 1 ripe avocado, mashed
- 2 hard-boiled eggs, finely chopped
- 2 tbsp. finely chopped chives
- 1 tbsp. lemon juice
- 1 tsp. garlic powder
- 1/2 tsp. salt
- 1/4 tsp. black pepper
Instructions
- Preheat oven to 400°F. Lightly grease a baking sheet.
- In a medium bowl, combine the chopped mushroom stems, mashed avocado, chopped hard-boiled eggs, chives, lemon juice, garlic powder, salt, and pepper. Mix well.
- Spoon the avocado-egg mixture into the mushroom caps, arranging them on the prepared baking sheet.
- Bake for 12-15 minutes, until the mushrooms are tender and the filling is heated through.
