These no-bake banana bread freezer cookies transform overripe bananas into chewy, indulgent treats without ever turning on the oven.

- 1 very ripe banana
- 3 tbsp creamy peanut butter
- 1/4 cup almond flour
- 1/4 cup coconut flour
- 1/2 tsp vanilla extract
- 2 tbsp maple syrup
- Chocolate chips (mini, optional)
- 1/2 cup semi-sweet vegan chocolate chips
- 2 tsp coconut oil
- Flaky salt for sprinkling
Instructions
- Mash the ripe banana in a medium mixing bowl until smooth and no large chunks remain.
- Add the peanut butter, vanilla extract, and maple syrup to the banana, then stir until well combined and creamy.
- Fold in the almond flour and coconut flour, mixing until a thick, slightly sticky dough forms.
- Stir in mini chocolate chips if using.
- Using a tablespoon or cookie scoop, portion the dough and shape into cookies. Place them on a parchment-lined baking sheet about an inch apart.
- Freeze the cookies for at least 30 minutes until firm.
- Meanwhile, melt the vegan chocolate chips and coconut oil in a microwave-safe bowl.
- Dip each frozen cookie halfway into the melted chocolate, return to the parchment-lined sheet, and sprinkle with flaky salt.
- Allow the cookies to sit at room temperature for 2-3 minutes before enjoying.
