Ingredients

  • 3 tbsp creamy peanut butter
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 tsp vanilla extract
  • 2 tbsp maple syrup
  • Chocolate chips (mini, optional)
  • 1/2 cup semi-sweet vegan chocolate chips
  • 2 tsp coconut oil
  • Flaky salt for sprinkling

Instructions

  1. Mash the ripe banana in a medium mixing bowl until smooth and no large chunks remain.
  2. Add the peanut butter, vanilla extract, and maple syrup to the banana, then stir until well combined and creamy.
  3. Fold in the almond flour and coconut flour, mixing until a thick, slightly sticky dough forms.
  4. Stir in mini chocolate chips if using.
  5. Using a tablespoon or cookie scoop, portion the dough and shape into cookies. Place them on a parchment-lined baking sheet about an inch apart.
  6. Freeze the cookies for at least 30 minutes until firm.
  7. Meanwhile, melt the vegan chocolate chips and coconut oil in a microwave-safe bowl.
  8. Dip each frozen cookie halfway into the melted chocolate, return to the parchment-lined sheet, and sprinkle with flaky salt.
  9. Allow the cookies to sit at room temperature for 2-3 minutes before enjoying.
