- 1/2 cup crumbled feta cheese
- 1/4 cup dried cranberries
- 2 tablespoons honey (plus more for drizzling)
- 1 tablespoon unsalted butter, divided into small cubes
- 1 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- Fresh mint (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
- Core the apples, leaving the bottom intact.
- In a small bowl, mix crumbled feta, dried cranberries, cinnamon, and vanilla extract.
- Stuff the apples with the feta-cranberry mixture.
- Drizzle each apple with honey and top with a cube of butter.
- Cover the baking dish with foil and bake for 25–30 minutes until apples are tender.
- Remove foil and bake for another 5–10 minutes until the tops brown.
- Let cool slightly, garnish with mint if desired, and serve warm.
