  • 1/2 cup crumbled feta cheese
  • 1/4 cup dried cranberries
  • 2 tablespoons honey (plus more for drizzling)
  • 1 tablespoon unsalted butter, divided into small cubes
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • Fresh mint (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  2. Core the apples, leaving the bottom intact.
  3. In a small bowl, mix crumbled feta, dried cranberries, cinnamon, and vanilla extract.
  4. Stuff the apples with the feta-cranberry mixture.
  5. Drizzle each apple with honey and top with a cube of butter.
  6. Cover the baking dish with foil and bake for 25–30 minutes until apples are tender.
  7. Remove foil and bake for another 5–10 minutes until the tops brown.
