- 2 cups fresh spinach, chopped
- 2 tablespoons unsalted butter
- 4 large eggs
- 2 tablespoons heavy cream
- Salt and freshly ground black pepper, to taste
- Paprika, for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, melt the butter over medium heat. Add the chopped spinach and sauté until wilted, about 2-3 minutes. Season with a pinch of salt and pepper.
- Divide the sautéed spinach evenly among 4 oven-safe ramekins or small baking dishes.
- Crack an egg into each ramekin, being careful not to break the yolks.
- Drizzle 1/2 tablespoon of heavy cream over each egg.
- Bake in the preheated oven for 12-15 minutes, or until the eggs are cooked to your desired doneness.
- Remove the baked eggs florentine from the oven and sprinkle with a light dusting of paprika.
