Ingredients

  • 2 cups fresh spinach, chopped
  • 2 tablespoons unsalted butter
  • 4 large eggs
  • 2 tablespoons heavy cream
  • Salt and freshly ground black pepper, to taste
  • Paprika, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, melt the butter over medium heat. Add the chopped spinach and sauté until wilted, about 2-3 minutes. Season with a pinch of salt and pepper.
  3. Divide the sautéed spinach evenly among 4 oven-safe ramekins or small baking dishes.
