- For the Cinnamon Swirl:
- 1 tbsp almond butter (or any nut butter)
- 1 tsp cinnamon
- 1/2 tbsp maple syrup or sugar-free syrup
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a small baking dish or oven-safe ramekin.
- In a medium bowl, combine rolled oats, unsweetened applesauce, almond milk, egg, baking powder, cinnamon, vanilla extract, maple syrup, and salt. Stir until well combined.
- In a small bowl, mix almond butter, cinnamon, and maple syrup until smooth to create the cinnamon swirl filling.
- Pour half of the oatmeal mixture into the prepared dish. Drop half of the cinnamon swirl mixture in dollops over the oatmeal.
- Pour the remaining oatmeal mixture on top. Add the rest of the cinnamon swirl mixture and gently swirl it through the oatmeal using a toothpick or knife.
- Bake for 25–30 minutes, or until the center is set and the edges are lightly golden.
- Let cool for a few minutes before serving.
