  • 2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Extra sugar for rolling (optional)
  • Chocolate chips (optional)
  • Chopped peanuts (optional)
  • Peanut butter chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream the butter, peanut butter, brown sugar, and granulated sugar until light and fluffy, about 2–3 minutes.
  3. Mix in the egg, egg yolk, and vanilla until smooth.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
  6. Roll dough into 1–2 tbsp balls. If desired, roll each ball in granulated sugar.
  7. Place on the baking sheet and gently press with a fork to create a criss-cross pattern.
  8. Bake 8–10 minutes, until edges are set but the centers still look soft and slightly puffy.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
