Description

Ingredients

  • 1 cup Greek yogurt
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups fresh or frozen blueberries
  • 1 tbsp lemon juice
  • 1/4 cup water
  • 12 tbsp sugar
  • 1 cup graham crackers, crushed
  • 1 cup cool whip or coconut whip

Instructions

  1. Blend cream cheese, Greek yogurt, powdered sugar, and vanilla extract until smooth.
  2. In a saucepan, simmer blueberries with lemon juice, water, and sugar until they burst and become glossy, about 5 minutes.
  3. Set aside to cool.
  4. Layer crushed graham crackers at the bottom of each glass.
  5. Add a dollop of the cheesecake mixture followed by a spoon of the blueberry topping.
  6. Repeat the layers until the glasses are full.
  7. Chill for at least 30 minutes before serving.
