Ingredients

  • 1 lb ground breakfast sausage or chorizo
  • 1 cup chopped onion
  • 1 can (4 oz) diced green chiles
  • 1 cup salsa
  • 6 large eggs
  • 1 cup milk
  • 2 cups shredded cheddar or Mexican-blend cheese
  • 4 cups frozen hash browns, thawed
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • Salt and pepper to taste
  • Optional toppings: sour cream, avocado, chopped cilantro, jalapeños

Instructions

  1. Set oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a skillet, brown sausage or chorizo with onions over medium heat. Drain grease.
  3. Stir in green chiles and salsa, cooking for 2–3 minutes.
  4. Spread hash browns evenly in the dish and sprinkle with half the cheese.
  5. Spoon the sausage mix evenly over hash browns.
  6. In a bowl, whisk eggs, milk, garlic powder, cumin, chili powder, salt, and pepper.
  7. Pour egg mixture over the layers and top with remaining cheese.
  8. Bake uncovered for 40–45 minutes, until golden and set. Rest 5–10 minutes before slicing.
  9. Garnish with sour cream, avocado, and cilantro for the perfect finish.

Notes

  • Sausage or Chorizo: Use traditional breakfast sausage or spicy chorizo for extra depth of flavor.
  • Vegetarian: Replace sausage with black beans, peppers, and zucchini.
  • Hash Browns: Shredded or diced potatoes both work—just thaw and drain well.
  • Salsa: Choose your preferred spice level; mild or hot both taste great.
  • Cheese: Mexican blend, Monterey Jack, or Pepper Jack melt beautifully.
