- 1 lb ground breakfast sausage or chorizo
- 1 cup chopped onion
- 1 can (4 oz) diced green chiles
- 1 cup salsa
- 6 large eggs
- 1 cup milk
- 2 cups shredded cheddar or Mexican-blend cheese
- 4 cups frozen hash browns, thawed
- ½ teaspoon garlic powder
- ½ teaspoon cumin
- ½ teaspoon chili powder
- Salt and pepper to taste
- Optional toppings: sour cream, avocado, chopped cilantro, jalapeños
Instructions
- Set oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a skillet, brown sausage or chorizo with onions over medium heat. Drain grease.
- Stir in green chiles and salsa, cooking for 2–3 minutes.
- Spread hash browns evenly in the dish and sprinkle with half the cheese.
- Spoon the sausage mix evenly over hash browns.
- In a bowl, whisk eggs, milk, garlic powder, cumin, chili powder, salt, and pepper.
- Pour egg mixture over the layers and top with remaining cheese.
- Bake uncovered for 40–45 minutes, until golden and set. Rest 5–10 minutes before slicing.
- Garnish with sour cream, avocado, and cilantro for the perfect finish.

- Sausage or Chorizo: Use traditional breakfast sausage or spicy chorizo for extra depth of flavor.
- Vegetarian: Replace sausage with black beans, peppers, and zucchini.
- Hash Browns: Shredded or diced potatoes both work—just thaw and drain well.
- Salsa: Choose your preferred spice level; mild or hot both taste great.
- Cheese: Mexican blend, Monterey Jack, or Pepper Jack melt beautifully.
