- 4 cups whole milk
- 1 cup coconut milk
- 3/4 cup white sugar
- 1/4 cup cornstarch
- 1 teaspoon vanilla extract
- 1/2 cup shredded coconut, plus more for garnish
Instructions
- In a large saucepan, whisk together the whole milk, coconut milk, sugar, and cornstarch until well combined.
- Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and begins to bubble, about 10-12 minutes.
- Remove from heat and stir in the vanilla extract and 1/2 cup of shredded coconut.
- Pour the coconut pudding into individual serving dishes or a large serving bowl. Refrigerate for at least 2 hours or until completely set.
- Serve chilled, garnished with additional shredded coconut and a light dusting of cinnamon, if desired.
