  • 4 medium russet potatoes, cut into 1/2-inch thick fries
  • 4 eggs
  • 1/2 cup unsalted butter
  • 2 egg yolks
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • Pinch of cayenne pepper
  • 2 tablespoons chopped fresh chives

Instructions

  1. Preheat oven to 400°F. Spread the fries on a baking sheet and bake for 20-25 minutes, flipping halfway, until golden brown and crispy.
  2. While the fries are baking, prepare the hollandaise sauce. In a double boiler or heatproof bowl set over a saucepan of simmering water, whisk together the egg yolks, lemon juice, salt, and cayenne until thickened, about 5-7 minutes.
