- 4 medium russet potatoes, cut into 1/2-inch thick fries
- 4 eggs
- 1/2 cup unsalted butter
- 2 egg yolks
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- Pinch of cayenne pepper
- 2 tablespoons chopped fresh chives
Instructions
- Preheat oven to 400°F. Spread the fries on a baking sheet and bake for 20-25 minutes, flipping halfway, until golden brown and crispy.
- While the fries are baking, prepare the hollandaise sauce. In a double boiler or heatproof bowl set over a saucepan of simmering water, whisk together the egg yolks, lemon juice, salt, and cayenne until thickened, about 5-7 minutes.
- Gradually whisk in the melted butter, a little at a time, until the sauce is smooth and creamy. Remove from heat and keep warm.
- Poach the eggs in simmering water for 3-4 minutes until cooked to your desired doneness.
- To assemble, place the crispy fries on a plate, top with the poached eggs, and drizzle the hollandaise sauce over the top. Garnish with fresh chives.
