- 4 large flour tortillas
- 4 large eggs
- 1 cup shredded cheese (cheddar, mozzarella, or blend)
- 1 tablespoon butter or oil
- Salt and pepper, to taste

- Sautéed onions or bell peppers
- Spinach or kale
- Hot sauce or salsa
Instructions
- Crack the eggs into a bowl, season with salt and pepper, and whisk lightly.
- Heat half the butter in a skillet over medium heat. Scramble the eggs until just set. Remove and set aside.
- Lay out two tortillas. Add cheese, scrambled eggs, and more cheese on one half of each. Fold over.
- Add remaining butter to the skillet. Cook quesadillas 2–3 minutes per side until crispy and golden.
- Rest briefly, slice into wedges, and enjoy with salsa, avocado, or dips.
