  • 810 fresh sage leaves (plus extra for garnish)

  • 1 tablespoon brown sugar + pinch of sea salt for rim

Instructions

  1. Make the brown sugar-sage syrup: In a small saucepan, combine water and brown sugar. Bring to a simmer, then add the sage leaves. Simmer gently for 2–3 minutes, then remove from heat and let the leaves steep for 5 minutes. Strain the syrup, discarding the leaves, and let it cool slightly.
  2. Prepare the glassware: If you’d like a rim, mix brown sugar with a pinch of sea salt on a small plate. Rub a lime wedge around the rim of each glass, then dip into the rim mixture. Set the glasses aside.
  3. Combine the flavors: In a shaker or a tall glass, add grapefruit juice, lime juice, and 2–3 teaspoons of the warm-sage syrup. If you want a stronger ginger note, add the grated ginger now. Fill the shaker with ice and shake vigorously for about 15 seconds, until well chilled.
  4. Assemble the Palomas: Fill the prepared glasses with fresh ice. Strain or pour the citrus–syrup mixture evenly into the glasses, then top with sparkling water. Stir gently to integrate the fizz without losing too much sparkle.
  5. Taste and adjust: If you’d like more sweetness, add another teaspoon of syrup; if the drink is too sweet, add a squeeze more lime or a splash of sparkling water. The idea is a bright, balanced drink that feels refreshing and not too heavy.
