  • 200 g peeled, finely chopped apples
  • 120 g brown sugar (for glaze)
  • 2 tbsp butter
  • 1 egg
  • 80 ml milk
  • 1/2 tsp cinnamon + extra for coating
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Vegetable oil for frying
  • 60 g powdered sugar (for glaze and dusting)
  • Vanilla extract (for glaze)

Instructions

  1. In a bowl, whisk together all-purpose flour, baking powder, cinnamon, and salt.
  2. In another bowl, whisk together milk, egg, and 1 tablespoon of brown sugar until smooth.
  3. Gently combine the dry and wet mixtures, then fold in the finely chopped apples.
  4. Heat vegetable oil in a deep pan to 175°C (350°F).
  5. Drop small spoonfuls of batter into the hot oil and fry for 2-3 minutes on each side until golden brown.
  6. Remove fritters from oil and drain on paper towels.
  7. While warm, roll the fritters in a mixture of cinnamon and sugar.
  8. To make the butterscotch glaze, simmer the remaining brown sugar, butter, and 60 ml of milk in a small saucepan for one minute.
  9. Remove from heat and whisk in powdered sugar and a splash of vanilla extract until smooth.
  10. Drizzle the butterscotch glaze over the warm fritters and serve immediately.
