- 4 slices bacon, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 cup diced celery
- 1/2 cup diced bell pepper
- 1 teaspoon Cajun seasoning
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon black pepper
- 4 cups diced potatoes (about 2–3 medium)
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 2 green onions, sliced (for garnish)
- Optional: chopped parsley for garnish
Instructions
- In a large pot, cook chopped bacon over medium heat until crisp. Remove and set aside, leaving the bacon fat in the pot.
- Add onion, celery, and bell pepper to the pot. Sauté 3–4 minutes until softened.
- Stir in garlic, Cajun seasoning, smoked paprika, and black pepper. Cook 1 minute until fragrant.
- Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.
- Using a potato masher or immersion blender, slightly mash some of the potatoes for a creamy texture while leaving some chunks for bite.
- Stir in heavy cream and shredded cheddar cheese until melted and smooth.
- Return cooked bacon to the soup. Heat through, then serve garnished with green onions and parsley.
