- 3 large yellow onions
- 4 tablespoons olive oil
- 1 teaspoon salt
- 3 cloves garlic, minced
- 1 teaspoon red pepper flakes
- 12 ounces linguine or spaghetti
- 1 cup reserved pasta water
- 2 tablespoons butter
- 1/2 cup grated Parmesan cheese
Instructions
- Thinly slice the onions. In a large skillet over medium-low heat, add 2 tablespoons of olive oil and the onions. Cook slowly for 30 to 40 minutes, stirring often, until caramelized and golden.
- While the onions cook, heat the remaining olive oil in a small saucepan. Add garlic and red pepper flakes. Simmer on low for 2 to 3 minutes until fragrant. Do not burn the garlic. Remove from heat and set aside.
- Bring a pot of salted water to a boil and cook the pasta until al dente. Reserve 1 cup of the pasta water before draining.
- Add the drained pasta to the skillet with the caramelized onions. Pour in the chilli oil and a splash of the reserved pasta water. Toss to coat evenly.
- Stir in the butter and Parmesan cheese. Add more pasta water as needed to loosen the sauce until it becomes silky and coats the pasta.
- Serve immediately with extra Parmesan and a drizzle of chilli oil on top.
