- 1 tsp baking soda
- ½ tsp baking powder

- 2 large eggs (room temperature)
- ½ cup granulated sugar
- ¼ cup brown sugar (packed)
- ½ cup vegetable oil (or melted coconut oil)
- 1 tsp vanilla extract
- 1 cup grated carrots
- 1 cup grated zucchini (lightly squeezed)
- 1 cup grated apple (peeled or unpeeled)
- ½ cup chopped walnuts or pecans (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
- In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In a separate large bowl, whisk eggs, granulated sugar, brown sugar, oil, and vanilla until smooth.
- Stir in grated carrots, zucchini, and apple until evenly combined.
- Gradually fold the dry ingredients into the wet mixture just until combined. Do not overmix.
- Gently fold in nuts if using.
- Pour batter into prepared pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

- Store the bread in an airtight container at room temperature for up to 3 days.
- This bread can also be frozen for up to 3 months.
