  • ¼ cup brown sugar (packed)

  • 1 tsp vanilla extract
  • 1 cup grated carrots
  • 1 cup grated zucchini (lightly squeezed)
  • 1 cup grated apple (peeled or unpeeled)
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In a separate large bowl, whisk eggs, granulated sugar, brown sugar, oil, and vanilla until smooth.
  4. Stir in grated carrots, zucchini, and apple until evenly combined.
  5. Gradually fold the dry ingredients into the wet mixture just until combined. Do not overmix.
  6. Gently fold in nuts if using.
  7. Pour batter into prepared pan and smooth the top.
