  • 1 tablespoon sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon dried herbs (rosemary, thyme, or a mix)
  • 1 1/4 cups buttermilk (plus extra for brushing the top)
  • 1 cup shredded cheddar cheese (preferably sharp cheddar)
  • 2 tablespoons unsalted butter (melted)

Instructions

  1. Preheat your oven to 375°F (190°C). If you’re using a cast iron skillet, place it in the oven as it preheats to help the bread bake evenly and get a crispy crust.
  2. In a large mixing bowl, whisk together flour, sugar, baking soda, salt, and your choice of dried herbs. Make sure everything is evenly distributed.
  3. Make a well in the center of your dry ingredients and pour in the buttermilk, melted butter, and shredded cheddar cheese. Stir gently with a wooden spoon or spatula until the dough begins to come together. Be careful not to overwork the dough—this will help keep the bread light and tender.
  4. Turn the dough out onto a lightly floured surface. With your hands, gently shape it into a round loaf. It doesn’t need to be perfect—rustic is the goal! If the dough feels too sticky, sprinkle it with a little extra flour, but be careful not to add too much.
  5. Transfer the dough onto a baking sheet (or into a preheated cast iron skillet). Using a sharp knife, score an “X” on top of the dough, about 1/2 inch deep. This allows the bread to bake more evenly. Brush the top of the dough with a little extra buttermilk for a golden, glossy finish. Place the bread in the preheated oven and bake for 35-40 minutes, or until the bread is golden brown on top and sounds hollow when tapped on the bottom.
  6. Allow the Cheddar Herb Soda Bread to cool on a wire rack for at least 10 minutes before slicing. Serve warm with butter or your favorite spread.
