- ½ cup unsalted butter (1 stick)

- 1 cup all-purpose flour (Foundation for the perfect puff)
- 4 large eggs (Room temperature)
- 1 cup finely shredded Cabot Seriously Sharp Cheddar (The star ingredient)
Instructions
- Preheat oven to 425°F.
- Line two large baking sheets with parchment paper.
- In a medium saucepan, combine milk, butter, salt, and cayenne pepper. Bring to a gentle boil.
- Lower heat, add flour all at once and stir until dough forms, about 2-3 minutes. Let cool for 5 minutes.
- Whisk eggs in a separate bowl and reserve 2 tablespoons for egg wash.
- Gradually add egg mixture to dough, stirring after each addition. Fold in cheddar.
- Pipe 1″ circles onto baking sheets, smoothing tops with wet fingers.
- Brush puffs with reserved egg and sprinkle additional cheddar on top.
- Bake for 10 minutes at 425°F, then reduce oven to 350°F and bake for another 18-19 minutes.
