Instructions

  1. Preheat oven to 425°F.
  2. Line two large baking sheets with parchment paper.
  3. In a medium saucepan, combine milk, butter, salt, and cayenne pepper. Bring to a gentle boil.
  4. Lower heat, add flour all at once and stir until dough forms, about 2-3 minutes. Let cool for 5 minutes.
  5. Whisk eggs in a separate bowl and reserve 2 tablespoons for egg wash.
  6. Gradually add egg mixture to dough, stirring after each addition. Fold in cheddar.
  7. Pipe 1″ circles onto baking sheets, smoothing tops with wet fingers.
