- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 cups peeled and diced potatoes
- 2 cups shredded cheddar cheese
- 3 cups beef broth
- 1 cup milk or heavy cream
- 1 cup shredded carrots
- 2 stalks celery, diced
- 1 tsp salt
- 1/2 tsp black pepper
- Optional: chopped green onions or bacon bits for garnish
Instructions
- In a large pot, brown the ground beef with onions and garlic. Drain excess fat.
- Add diced potatoes, carrots, celery, salt, and pepper. Pour in beef broth and bring to a boil.
- Reduce heat and simmer for 10–15 minutes, until vegetables are tender.
- Stir in milk or cream and shredded cheddar cheese. Cook until cheese is melted and soup is creamy.
- Adjust seasoning to taste. Garnish with green onions or bacon bits if desired. Serve hot.
