Description

Enjoy these delightful cheesecake stuffed baked apples, a perfect blend of creamy indulgence and rustic charm. Tender baked apples are filled with a tangy, velvety cheesecake mixture and topped with buttery graham cracker crumbs. This recipe is a cozy tradition, ideal for fall gatherings or any time you crave a sweet, comforting dessert.

Ingredients

Scale
  • For the Apples:
  • 4 large apples (Honeycrisp or Granny Smith recommended)
  • 1 tablespoon lemon juice
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • For the Cheesecake Filling:
  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/4 teaspoon ground nutmeg
  • For the Topping:
  • 1/2 cup graham cracker crumbs
  • 2 tablespoons butter, melted
  • 1 tablespoon brown sugar
  • 1/4 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking dish with parchment paper or lightly grease it.
  2. Core and hollow out each apple, ensuring not to cut through the bottom. Scoop out more of the inside to create space for the filling. Brush the insides with lemon juice. Sprinkle with brown sugar and cinnamon, then place the apples in the prepared dish.
  3. In a medium bowl, beat together the softened cream cheese and granulated sugar until smooth. Stir in the vanilla extract, large egg, and ground nutmeg until fully combined.
  4. Spoon the cheesecake mixture evenly into the hollowed apples, filling them nearly to the top.
  5. In a small bowl, combine the graham cracker crumbs, melted butter, brown sugar, and cinnamon. Stir until the mixture is well combined. Sprinkle this topping generously over each filled apple.
  6. Bake for 25–30 minutes, or until the apples are tender and the topping is golden brown. The cheesecake filling should be set.
  7. Let the apples cool slightly before serving. Enjoy them warm or chilled.

Notes

  • These cheesecake stuffed baked apples can be prepared ahead. Bake them, then refrigerate. Reheat in the oven at 300°F for 10–15 minutes or serve chilled.
  • Firm apples like Honeycrisp or Granny Smith work best as they hold their shape during baking.
  • For a spiced variation, add a pinch of ground cloves or allspice to the cheesecake filling.
  • Avoid overbaking to prevent the apples from becoming mushy.
  • Add crushed pecans or walnuts to the topping for extra crunch.
