These Easy Cheesy Ground Beef Enchiladas are a quick and comforting Mexican-inspired meal — soft tortillas stuffed with seasoned ground beef, smothered in rich enchilada sauce, and topped with melted cheese.
Ingredients

- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp paprika
- Salt and pepper, to taste
- 8–10 flour or corn tortillas
- 1 1/2 cups shredded cheddar or Mexican blend cheese
- 1 1/2 cups enchilada sauce
- Optional: chopped cilantro for garnish
Instructions
- Preheat to 375°F (190°C).
- In a skillet, brown ground beef with onions and garlic. Drain excess fat. Season with chili powder, cumin, paprika, salt, and pepper.
- Spread a small amount of enchilada sauce in a baking dish. Place a portion of cooked beef on each tortilla, sprinkle with cheese, roll up, and place seam-side down in the dish.
- Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
- Cover with foil and bake 15–20 minutes. Remove foil and bake an additional 5–10 minutes until cheese is melted and bubbly.
- Garnish with cilantro and serve warm.
