Description

These Easy Cheesy Ground Beef Enchiladas are a quick and comforting Mexican-inspired meal — soft tortillas stuffed with seasoned ground beef, smothered in rich enchilada sauce, and topped with melted cheese.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 810 flour or corn tortillas
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • 1 1/2 cups enchilada sauce
  • Optional: chopped cilantro for garnish

Instructions

  1. Preheat to 375°F (190°C).
  2. In a skillet, brown ground beef with onions and garlic. Drain excess fat. Season with chili powder, cumin, paprika, salt, and pepper.
  3. Spread a small amount of enchilada sauce in a baking dish. Place a portion of cooked beef on each tortilla, sprinkle with cheese, roll up, and place seam-side down in the dish.
  4. Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
  5. Cover with foil and bake 15–20 minutes. Remove foil and bake an additional 5–10 minutes until cheese is melted and bubbly.
  6. Garnish with cilantro and serve warm.
