Description
These brownie mix cookies transform your favorite boxed mix into fudgy, chewy bites of chocolate bliss.
Ingredients
Scale
- 1 box (18-20 oz) brownie mix
- 2 large eggs
- ⅓ cup vegetable oil (or melted butter for a richer taste)
- 2 tablespoons all-purpose flour
- 1 teaspoon vanilla extract (optional, but adds great flavor)
- ½ cup chocolate chips or chunks (optional, for extra chocolatey goodness)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
- Combine the brownie mix, eggs, and vegetable oil (or melted butter) in a large mixing bowl.
- Add the all-purpose flour and vanilla extract (if using) to the bowl and stir until completely incorporated.
- Fold in the chocolate chips or chunks, distributing them evenly throughout the dough.
- Scoop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes until the edges are set but the centers still look slightly underbaked.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Serve warm for that irresistible gooey center, or allow to cool completely for a chewier texture.
Notes
- The cookies will spread slightly during baking.
- Don’t overbake; they continue cooking on the hot baking sheet.
- They are fragile when hot but firm up beautifully as they cool.
