Description

Ingredients

  • 2 chicken breasts (sliced into 4 cutlets)
  • 1 cup flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 eggs (beaten)
  • 0.5 cup buttermilk
  • oil for frying
  • 3 tbsp butter
  • 3 tbsp flour
  • 22.5 cups milk
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • cayenne pepper (optional pinch)

Instructions

  1. Slice chicken breasts horizontally into cutlets and pound to even thickness.
  2. Mix flour, salt, pepper, paprika, garlic powder, and onion powder in a shallow dish.
  3. Whisk eggs and buttermilk together in a second dish.
  4. Dredge chicken in flour, then egg mixture, then flour again.
  5. Heat oil in a skillet over medium heat.
  6. Fry chicken 3–4 minutes per side until golden and crispy.
  7. For gravy: melt butter, whisk in flour, then slowly add milk until thick. Season with salt and pepper.
  8. Serve chicken topped with warm gravy.
