Ingredients

  • 2 tbsp olive oil (or butter)
  • 1 onion (diced)
  • 3 carrots (sliced)
  • 3 celery stalks (sliced)
  • 3 cloves garlic (minced)
  • 8 cups chicken broth
  • 2 cups shredded cooked chicken
  • 2 cups wide egg noodles
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 tsp salt (or to taste)
  • 0.5 tsp black pepper
  • fresh parsley (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook until softened, about 5–7 minutes.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Pour in chicken broth and add bay leaf, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 10–12 minutes until vegetables are tender.
  5. Add egg noodles and cook 7–10 minutes until tender.
  6. Stir in shredded chicken and simmer 3 minutes to heat through.
  7. Remove bay leaf, taste, and adjust seasoning.
  8. Serve hot topped with fresh parsley.
