- 2 tbsp olive oil (or butter)
- 1 onion (diced)
- 3 carrots (sliced)
- 3 celery stalks (sliced)
- 3 cloves garlic (minced)
- 8 cups chicken broth
- 2 cups shredded cooked chicken
- 2 cups wide egg noodles
- 1 bay leaf
- 1 tsp dried thyme
- 1 tsp salt (or to taste)
- 0.5 tsp black pepper
- fresh parsley (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook until softened, about 5–7 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and add bay leaf, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 10–12 minutes until vegetables are tender.
- Add egg noodles and cook 7–10 minutes until tender.
- Stir in shredded chicken and simmer 3 minutes to heat through.
- Remove bay leaf, taste, and adjust seasoning.
- Serve hot topped with fresh parsley.
