- 2 lbs bone-in, skinless chicken thighs
- 2 tablespoons neutral oil or butter
- 1 large onion, sliced thin
- 3 cloves garlic, minced
- 2 tablespoons Hungarian sweet paprika
- 1 cup chicken broth
- 1 cup sour cream
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh parsley, for garnish (optional)
Instructions
- Heat oil or butter in a large, deep skillet or Dutch oven over medium-high heat.
- Season chicken thighs with salt and pepper. Brown the chicken in batches until colored on both sides. Remove chicken and set aside.
- Add sliced onions to the same skillet. Cook on medium-low heat, stirring occasionally, until soft and golden, about 10-15 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Remove the skillet from heat briefly. Sprinkle in the paprika and stir quickly to combine. Be careful not to burn the paprika.
- Return the chicken to the skillet. Pour in the chicken broth. Bring to a gentle simmer, then cover and cook for 30-35 minutes, or until chicken is cooked through.
- Meanwhile, in a small bowl, stir the flour into the sour cream until mostly smooth.
- Scoop out about 1/4 cup of the hot cooking liquid from the skillet and mix it into the sour cream mixture to temper it.
- Pour the tempered sour cream mixture back into the skillet. Stir gently until combined.
- Cook for another 5 minutes, stirring, until the sauce thickens.
- Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley if desired.

- For a less dry chicken, you can use chicken breast cut into larger chunks, but adjust the cooking time.
- If your sauce looks like it’s splitting, stir in a splash of milk or water and whisk.
- Greek yogurt can be substituted for sour cream, but it will be tangier.
- Avoid using smoked paprika for the first time, as it can drastically change the flavor.
