  • 2 lbs bone-in, skinless chicken thighs
  • 2 tablespoons neutral oil or butter
  • 1 large onion, sliced thin
  • 3 cloves garlic, minced
  • 2 tablespoons Hungarian sweet paprika
  • 1 cup chicken broth
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley, for garnish (optional)

Instructions

  1. Heat oil or butter in a large, deep skillet or Dutch oven over medium-high heat.
  2. Season chicken thighs with salt and pepper. Brown the chicken in batches until colored on both sides. Remove chicken and set aside.
  3. Add sliced onions to the same skillet. Cook on medium-low heat, stirring occasionally, until soft and golden, about 10-15 minutes.
  4. Add minced garlic and cook for 1 minute until fragrant.
  5. Remove the skillet from heat briefly. Sprinkle in the paprika and stir quickly to combine. Be careful not to burn the paprika.
  6. Return the chicken to the skillet. Pour in the chicken broth. Bring to a gentle simmer, then cover and cook for 30-35 minutes, or until chicken is cooked through.
  7. Meanwhile, in a small bowl, stir the flour into the sour cream until mostly smooth.
  8. Scoop out about 1/4 cup of the hot cooking liquid from the skillet and mix it into the sour cream mixture to temper it.
  9. Pour the tempered sour cream mixture back into the skillet. Stir gently until combined.
  10. Cook for another 5 minutes, stirring, until the sauce thickens.
  11. Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley if desired.

  • For a less dry chicken, you can use chicken breast cut into larger chunks, but adjust the cooking time.
  • If your sauce looks like it’s splitting, stir in a splash of milk or water and whisk.
