Ingredients

- 2 sourdough rolls
- 4 tablespoons basil pesto
- 2 pieces cooked chicken schnitzels
- 100 grams fresh mozzarella
- 1 medium tomato
- 1 pinch sea salt flakes
- 1 pinch freshly cracked black pepper
- 1 handful rocket (arugula)
- 2 tablespoons whole-egg mayonnaise
Instructions
- Preheat the oven grill (broiler) to high. Place the sourdough rolls cut-side up on a baking tray. Toast under the grill for about 1–2 minutes until golden brown.
- Spread the basil pesto generously on the base of each toasted roll. Layer on the cooked chicken schnitzel, followed by sliced tomatoes and mozzarella. Sprinkle with sea salt and pepper.
- Add the rocket (arugula) on top of the cheese. Spread the mayonnaise on the top half of each roll before capping the sandwich. Press gently, slice in half, and serve immediately.
