- 1 tablespoon Chilli powder/flakes (adjust to suit your spice level)
- 4 cloves Garlic (minced)
- 0.5 tablespoon White sugar (to balance the spice)
- 3 tablespoons Neutral oil (sunflower, grapeseed, or canola)
- 1.5 tablespoons Soy sauce
- 0.5 tablespoon Black vinegar (for tang)
- 0.5 teaspoon Sesame oil (for a rich finish)
- 0.5 cup Coriander (finely chopped)
- 2 Spring onions (finely chopped)
- 1 tablespoon Homemade crispy chilli oil (optional)
Instructions
- In a large heatproof bowl, mix together the chilli powder (or flakes), minced garlic, and sugar.
- On medium heat, pour neutral oil into a small saucepan and warm it until you see small ripples.
- Carefully pour the scorching hot oil into your bowl of chilli garlic mixture and mix well. Then add soy sauce, black vinegar, and sesame oil.
- Cook the noodles according to the package instructions, which is typically around 3 minutes.
- Transfer the cooked noodles into your bowls with the prepared chili garlic sauce. Top with fresh coriander, spring onions, and crispy chilli oil if using.
- Mix everything well to ensure each noodle is coated in the sauce before serving.
