This chocolate-dipped strawberry mousse cake transforms simple ingredients into pure dessert magic.

- 1 box chocolate or vanilla cake mix (plus ingredients on the box)
- 2 cups fresh or frozen strawberries
- ½ cup sugar
- 1 tablespoon lemon juice
- 1 cup heavy cream
- 1 packet unflavored gelatin
- 2 tablespoons cold water
- 1 cup chocolate chips or chopped chocolate
- 2 tablespoons butter or cream
- Fresh strawberries (whole or halved)
- Optional: extra melted chocolate for drizzling
Instructions
- Prepare cake according to package directions or your favorite recipe. Allow it to cool completely in the pan, then transfer to your serving plate. Trim the top to create a flat surface for a professional look.
- Combine strawberries, sugar, and lemon juice in a medium saucepan. Bring to a simmer over medium heat and cook for about 5-7 minutes until berries soften and release their juices, stirring occasionally.
- Blend the strawberry mixture until smooth. Strain through a fine mesh sieve to remove seeds if desired, then set aside to cool to room temperature.
- Dissolve gelatin in a small bowl with cold water and let stand for 5 minutes to bloom. Microwave for 10-15 seconds until the gelatin dissolves completely, then set aside to cool slightly but not set.
- Whip heavy cream in a large bowl with an electric mixer until stiff peaks form, about 3-4 minutes. The cream should hold its shape when the beater is lifted.
- Gently fold the strawberry mixture and dissolved gelatin into the whipped cream using a rubber spatula. Maintain the airy texture – the mousse should be light pink and fluffy.
- Spread the mousse in a thick, generous layer over the cake. Refrigerate for at least 3 hours or overnight until the mousse is firmly set.
- Melt chocolate in a double boiler or microwave in 30-second intervals, stirring between each until smooth and glossy. Let cool slightly before pouring over the set mousse layer. Quickly arrange fresh strawberries on top before the chocolate sets completely.
