  • 4 tablespoons unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1 cup heavy cream, chilled
  • 6 oz semisweet chocolate chips, melted and slightly cooled
  • 1/2 cup crushed peppermint candies or candy canes
  • Whipped cream, for topping
  • A pinch of salt

Instructions

  1. Make the crust: In a bowl, combine the chocolate cookie crumbs with the melted butter until the mixture looks like wet sand. Press firmly into a 9-inch pie dish, building a gentle rim around the sides. Chill in the fridge for 15 minutes to set the crust.
  2. Chill the filling bowl and beaters: Place the empty mixing bowl in the freezer for a few minutes so you can whip the cream with good volume later.
  3. Beat the cream cheese: In a medium bowl, beat the softened cream cheese with powdered sugar, vanilla, and peppermint extract until smooth and creamy.
  4. Whip the cream: In a separate chilled bowl, whip the heavy cream to soft peaks. Gently fold the whipped cream into the cream cheese mixture until fully incorporated and fluffy.
  5. Prepare the chocolate ribbon: Melt the semisweet chocolate chips until smooth. Allow to cool slightly so it doesn’t deflate the filling when swirled.
  6. Assemble the filling: Fold a third of the whipped cream into the cream cheese mixture, then fold in the rest until evenly incorporated. Reserve a spoonful to swirl over the top later, then fold in about half of the crushed peppermint candies.
  7. Layer the pie: Pour the filling into the chilled crust, smoothing the top. Drizzle the melted chocolate in a swirling pattern across the surface and scatter the remaining crushed peppermint candies on top.
  8. Chill until set: Refrigerate for at least 2–4 hours, or overnight for best flavor and texture.
  9. Garnish and serve: Before serving, top with whipped cream, crushed peppermint, and optional chocolate curls. Slice with a warmed knife for clean edges.
