Description

This Christmas Morning Brunch is a festive and cozy spread featuring fluffy pancakes, scrambled eggs, cinnamon rolls, and spiced hot chocolate — a perfect way to start the holiday with warmth and cheer.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 2 Tbsp sugar
  • 1 Tbsp baking powder
  • 1 1/4 cups milk (or more if needed)
  • 1 large egg
  • 2 Tbsp melted butter (plus more for cooking)
  • 1 can refrigerated cinnamon rolls (with icing included)
  • 8 eggs (lightly whisked)
  • 8 slices bacon (crispy)
  • 4 cups milk
  • 1/2 cup chocolate chips (semi-sweet or milk chocolate)
  • 2 Tbsp unsweetened cocoa powder
  • 2 Tbsp sugar
  • 1/2 tsp ground cinnamon (optional)
  • whipped cream or marshmallows (for topping)

Instructions

  1. Preheat oven according to cinnamon roll package directions. Bake cinnamon rolls until golden brown. Set aside and drizzle with icing.
  2. In a bowl, whisk together flour, sugar, baking powder, milk, egg, and melted butter for pancakes. Mix until smooth but not overmixed.
  3. Heat a buttered skillet or griddle over medium heat. Pour 1/4 cup of batter per pancake and cook until bubbles form. Flip and cook until golden. Keep warm.
  4. In a frying pan, cook bacon until crispy. Drain on paper towels. Scramble eggs in a separate pan with a pinch of salt and pepper until light and fluffy.
  5. For the hot chocolate, heat milk in a saucepan until warm. Whisk in chocolate chips, cocoa powder, sugar, and cinnamon. Stir until smooth and creamy. Serve topped with whipped cream or marshmallows.
  6. Arrange all items on a large platter or breakfast board — pancakes, eggs, bacon, cinnamon rolls, and mugs of hot chocolate — and enjoy your Christmas brunch!
