Instructions

  1. Start by gathering all your ingredients. Dice the onion and carrots, and measure out the rice and peas.
  2. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté it until it becomes translucent, about 3-4 minutes.
  3. Stir in the diced carrots and cook for about 4-5 minutes until they begin to soften.
  4. Add the rice to the pot and stir well to coat it with the oil and vegetables. Cook for about 1-2 minutes, stirring occasionally.
  5. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low.
