Description

Cinnamon Roll Muffins are soft, fluffy treats with swirls of cinnamon sugar. They are quick to make and perfect for breakfast, brunch, or a snack.


Ingredients

  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 teaspoons ground cinnamon
  • ¾ cup milk
  • 2 large eggs
  • ⅓ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • ⅓ cup brown sugar (for filling)
  • 1 teaspoon ground cinnamon (for filling)
  • ½ cup powdered sugar (for glaze)
  • 12 tablespoons milk or cream (for glaze)
  • 2 tablespoons cream cheese, softened (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners. Lightly grease the liners.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, beat the eggs and sugar, then add melted butter, milk, and vanilla. Mix until smooth.
  4. Fold the wet ingredients into the dry mixture, stirring gently until just combined.
  5. In a small bowl, mix ⅓ cup brown sugar with 1 tsp cinnamon to create the filling.
  6. Spoon half the muffin batter into the liners, sprinkle cinnamon sugar mix, then top with the remaining batter. Swirl gently with a toothpick.
  7. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let muffins cool in the tin for 5 minutes, then transfer to a wire rack.
  9. Mix powdered sugar and milk (plus cream cheese if using) until smooth and drizzle over cooled muffins.

Notes

  • Store muffins in an airtight container for up to 3 days.
  • These muffins freeze well; thaw before serving.
  • For extra flavor, add nuts or raisins to the batter.
