Description

These no-bake Coconut Almond Truffles are a simple, sweet, and nutty treat. They are perfect for holidays, parties, or as homemade gifts. Each truffle features a chewy coconut base with a whole almond surprise inside, coated in extra coconut.


Ingredients

  • 200 g sweetened condensed milk
  • 180 g desiccated coconut
  • 1 tsp vanilla extract
  • 20 whole almonds (raw or lightly toasted)
  • Extra desiccated coconut for coating

Instructions

  1. Toast the almonds (optional): For extra flavor, lightly toast the almonds in a dry pan over low heat for 3–5 minutes until golden. Let them cool.
  2. Make the coconut base: In a large bowl, mix the sweetened condensed milk, desiccated coconut, and vanilla extract until well combined. The mixture should be sticky and pliable, like soft dough.
  3. Shape the truffles: Scoop out about a tablespoon of the mixture. Flatten it in your palm, place an almond in the center, and roll it into a smooth ball, enclosing the almond inside.
  4. Coat the truffles: Roll each truffle in extra desiccated coconut to coat.
  5. Chill to set: Place the finished truffles on a tray lined with parchment paper and refrigerate for at least 1 hour to firm up.
