Flaky cod baked in a rich, creamy coconut curry sauce with garlic, ginger, lime, and warm spices.


Ingredients

  • 4 fillets cod (patted dry)
  • 0.5 tsp salt
  • 0.25 tsp pepper
  • 13.5 oz coconut milk (full-fat)
  • 2 tbsp curry paste (red or yellow)
  • 2 garlic cloves (minced)
  • 1 tsp ginger (grated)
  • 1 tbsp lime juice (fresh)
  • 1 tsp honey
  • 1 tsp curry powder
  • 0.5 tsp turmeric
  • 0.5 tsp salt
  • 0.25 tsp pepper
  • 2 tbsp cilantro (chopped)
  • 1 cup bell peppers or cherry tomatoes

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season cod fillets with salt and pepper and place in baking dish.
  3. Whisk coconut milk, curry paste, garlic, ginger, lime juice, honey, curry powder, turmeric, and seasoning together.
  4. Pour the coconut curry sauce over the cod.
  5. Add optional vegetables around the fillets.
  6. Bake 15–22 minutes depending on thickness until fish flakes easily.
  7. Garnish with cilantro and serve with rice or naan.
