Description

These Coconut Lover’s Rice Krispy Treats offer a chewy, gooey, and lightly crispy texture with a tropical coconut flavor. This no-bake dessert is quick to make and perfect for any occasion.


Ingredients

  • 6 cups crispy rice cereal
  • 1 (10 oz) bag mini marshmallows
  • 3 tablespoons unsalted butter
  • 1 teaspoon coconut extract
  • 1 1/2 cups sweetened shredded coconut, divided
  • Pinch of salt (optional)

Instructions

  1. Toast 1 cup of shredded coconut in a dry skillet over medium heat until golden brown, about 3-5 minutes. Set aside.
  2. Melt butter in a large saucepan over low heat. Add mini marshmallows and stir until completely melted and smooth.
  3. Remove from heat and stir in coconut extract and salt (if using).
  4. Add crispy rice cereal and toasted coconut to the marshmallow mixture. Stir until evenly coated.
  5. Grease a 9×13-inch pan or line with parchment paper. Pour the mixture into the pan and press into an even layer.
  6. Sprinkle the remaining 1/2 cup of untoasted shredded coconut over the top and gently press it in.
  7. Let cool for 30-45 minutes, then cut into squares and serve.
