- 2 medium beets (roasted and cubed)

Instructions
- Preheat oven to 400°F (200°C). Wrap each beet in aluminum foil with a sprinkle of salt and roast for 45-60 minutes until tender.
- While the beets roast, peel and shred the carrots; set aside.
- Once the beets cool slightly, unwrap them and cube.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- In a large mixing bowl, combine roasted beets, shredded carrots, and tangerine segments.
- Drizzle with dressing and toss gently until coated.
- Serve chilled or at room temperature.
