Ingredients

  • 1 lb beef chuck roast, cut into 1-inch cubes
  • 3/4 cup pearl barley
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 6 cups beef broth
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot over medium-high heat, add olive oil. Brown the beef cubes for about 5 minutes until golden on all sides. Remove from pot.
  2. In the same pot, sauté onions, carrots, celery, and garlic for about 5 minutes until softened.
  3. Return the beef to the pot along with pearl barley and bay leaves. Pour in enough beef broth to cover by about an inch.
  4. Bring to a boil, then reduce heat to low and cover. Simmer for at least one hour.
  5. Check if barley is tender; simmer longer if necessary.
  6. Remove bay leaves before serving.
