- 1 lb beef chuck roast, cut into bite-sized pieces
- 3/4 cup pearl barley
- 2 medium carrots, chopped
- 2 stalks celery, chopped
- 1 medium onion, diced
- 4 cloves garlic, minced
- 8 cups low-sodium beef broth
- 1 tsp dried thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- In a large pot over medium-high heat, brown the beef chuck roast until a crust forms. Remove and set aside.
- In the same pot, sauté onions until translucent (about 5 minutes). Add garlic, carrots, and celery; cook for another 3 minutes.
- Return the beef to the pot and mix in pearl barley, thyme, bay leaves, salt, pepper, and beef broth.
- Bring to a gentle boil; then reduce heat to low and simmer uncovered for about 1 hour until the meat is tender and barley is cooked.
- Adjust seasoning if needed before serving hot.
