- 4 medium poblano peppers
- 1 tablespoon olive oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 tablespoon fresh lime juice
- 1/4 cup chopped fresh cilantro, plus more for garnish
- Salt and black pepper to taste
Instructions
- Preheat the oven to 400°F. Place the poblano peppers on a baking sheet and roast for 20-25 minutes, turning occasionally, until the skins are charred. Transfer the peppers to a bowl, cover with plastic wrap, and let steam for 10 minutes.
- Peel the skins off the roasted peppers and remove the seeds. Chop the peppers into 1-inch pieces.
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook for 5 minutes, stirring occasionally, until softened.
- Add the chopped roasted poblano peppers, vegetable broth, and heavy cream to the pot. Bring the mixture to a simmer and cook for 10 minutes.
- Using an immersion blender, blend the soup until smooth and creamy. Stir in the lime juice and chopped cilantro. Season with salt and black pepper to taste.
