Description

Cranberry Baked Brie is a quick and elegant party appetizer. The gooey brie is wrapped in crisp pastry and topped with a sweet cranberry glaze.


Ingredients

  • 8 ounces brie cheese, rind intact
  • 1 sheet puff pastry, thawed
  • 1/2 cup fresh cranberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon orange zest
  • 1 tablespoon orange juice
  • 1 teaspoon balsamic glaze
  • 1 tablespoon chopped pecans
  • 1 large egg
  • 1 tablespoon water
  • 1 sprig fresh rosemary
  • Pinch flaky salt

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment for easy cleanup, and set the puff pastry on a lightly floured surface.
  2. Score a shallow circle in the pastry, large enough to cradle the brie, but don’t cut all the way through.
  3. Place the brie in the center of the pastry. You can spread a thin layer of the cranberry mixture on top of the brie before wrapping.
  4. In a small saucepan, combine cranberries, sugar, orange zest, and orange juice. Cook over medium heat until the cranberries burst, about 5–7 minutes.
  5. Spoon a generous portion of the cranberry glaze on top of the brie, letting some of the sauce nestle into the crevices.
  6. Fold the pastry over the brie, trimming any excess. Seal the seams with a little beaten egg wash.
  7. Turn the wrapped brie seam-side down onto the prepared baking sheet. Brush the pastry with the remaining egg wash and sprinkle with flaky salt and extra orange zest.
  8. Bake for 18–22 minutes, or until the pastry is deeply golden and puffed.
  9. Remove from the oven and let rest for 5–10 minutes. Garnish with fresh rosemary and serve with crusty bread, crackers, or apple slices.
