- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/4 teaspoon salt
- 1/2 cup fresh lemon juice (about 2–3 lemons)
- Zest of 1 lemon
- 1 cup fresh or frozen cranberries, chopped
- 2 large eggs
- 1 teaspoon baking powder
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper for easy removal.
- Prepare the Crust: In a mixing bowl, beat together the softened butter and granulated sugar until creamy. Add the flour and salt, mixing until just combined.
- Press the Crust: Evenly press the crust mixture into the bottom of the prepared baking pan. Bake for 15 minutes or until lightly golden.
- Mix the Filling: In a separate bowl, whisk together the eggs, lemon juice, lemon zest, and baking powder until well combined.
- Add Cranberries: Fold in the chopped cranberries gently to the lemon mixture.
- Pour Filling: Pour the filling over the pre-baked crust, spreading it evenly.
- Bake Again: Return the pan to the oven and bake for an additional 25-30 minutes, or until the filling is set and slightly golden.
- Cool: Remove from the oven and allow to cool in the pan for 30 minutes.
- Cut and Dust: Once cooled, lift the bars out of the pan using the parchment paper. Cut into squares and dust with powdered sugar if desired.
