Ingredients
- 6–7 bone-in, skin-on chicken thighs
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried parsley
- 1 teaspoon paprika
- ½ teaspoon black pepper (adjust to taste)
- 1 teaspoon salt (adjust to taste)
- ⅓ cup chicken stock
- ½ cup heavy cream
- 1 tablespoon all-purpose flour
- ½ cup grated Parmesan cheese
- 1.5 teaspoons Dijon mustard
Instructions
- Preheat your oven to 400°F (200°C). Pat the chicken thighs dry with a paper towel. In a bowl, mix all the seasoning ingredients and sprinkle evenly over both sides of the chicken.
- Pour the chicken stock into a 9×13 inch baking dish. Place the seasoned chicken thighs skin-side up in a single layer. Cover loosely with foil and bake for 30-35 minutes, or until the chicken is mostly cooked through and juices run clear.
- Carefully remove the foil. Baste the chicken with the pan juices. Transfer the chicken to a plate.
- In the baking dish, whisk the flour into the heavy cream until smooth. Add the Dijon mustard and Parmesan cheese, and stir well.
- Place the chicken thighs back into the dish, uncovered. Bake for another 25-30 minutes, until the chicken is fully cooked and the sauce has thickened.
- Stir the sauce well before serving.
