Description

A delicious and creamy chicken pesto pasta with sundried tomatoes. This easy recipe is perfect for a cozy weeknight dinner.

Ingredients

Scale
  • 340g (12 oz) penne pasta
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 120g (1/2 cup) sundried tomatoes (in oil), drained and sliced
  • 120ml (1/2 cup) basil pesto
  • 240ml (1 cup) heavy cream
  • 60g (1/2 cup) grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the chicken pieces, season with salt and pepper, and sauté until cooked through and golden, about 5-7 minutes. Remove chicken and set aside.
  3. In the same skillet, add the minced garlic and sundried tomatoes. Sauté for 1-2 minutes until fragrant.
  4. Reduce heat to low and pour in the heavy cream. Stir in the basil pesto and Parmesan cheese. Simmer gently for 2-3 minutes until the sauce is smooth.
  5. Return the cooked chicken to the skillet and toss to coat in the sauce. Add the drained pasta and combine well until everything is evenly coated and heated through.
  6. Serve immediately, garnished with fresh basil leaves and extra Parmesan if desired.

Notes

  • For a healthier option, you can use half-and-half instead of heavy cream and simmer it longer.
  • Pre-cooked rotisserie chicken can be used as a shortcut.
  • Wholewheat pasta is a good alternative.
  • Sunflower seeds can be used as a substitute for pine nuts.
  • Leftovers can be stored in the fridge for up to two days and may taste even better the next day.
  • When reheating, add a splash of water or milk to prevent drying out.
  • A light salad or garlic bread makes a great accompaniment.
  • A squeeze of fresh lemon can brighten the flavors.
