- 12 oz pasta
- 1.5 lbs chicken breast, diced
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 2 tbsp butter
- 2 tbsp flour
- 1.5 cups chicken broth
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 1.5 cups shredded mozzarella cheese
- 1 tsp salt
- 0.5 tsp black pepper
- 2 tbsp chopped parsley
Instructions
- Boil pasta in salted water until al dente. Drain and set aside.
- In a large skillet, heat olive oil and cook diced chicken breast until golden and cooked through. Remove and set aside.
- In the same pan, melt butter and sauté garlic until fragrant. Stir in flour and cook for 1 minute to make a roux.
- Gradually whisk in chicken broth and heavy cream. Stir constantly until sauce thickens.
- Add parmesan cheese, salt, and pepper. Stir until melted and smooth.
- Add cooked pasta and chicken into the sauce and mix to coat everything evenly.
- Transfer the mixture into a greased baking dish. Top with shredded mozzarella.
- Bake at 375°F for 20 minutes or until bubbly and golden.
- Let rest for 5 minutes. Sprinkle with chopped parsley before serving.
