This Creamy Gnocchi with Spinach and Feta is a rich, comforting, one-pan meal made with pillowy gnocchi simmered in a luscious cream sauce.

- 1 tablespoon olive oil
- 1 tablespoon butter
- 3 cloves garlic, minced
- 1 (16 oz) package potato gnocchi
- 1 cup chicken broth (or vegetable broth)
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt (adjust to taste)
- 3 cups fresh spinach
- 1 cup crumbled feta cheese
- 1/4 cup grated Parmesan cheese (optional)
- Fresh basil or parsley for garnish
Instructions
- Heat olive oil and butter in a large skillet over medium heat.
- Add garlic and sauté for 1 minute until fragrant.
- Stir in the gnocchi and toast for 2–3 minutes.
- Pour in the chicken broth and heavy cream. Add Italian seasoning, salt, and pepper.
- Bring to a simmer, then reduce heat and cook for 5–7 minutes until the gnocchi becomes tender and the sauce thickens.
- Stir in the fresh spinach and cook until wilted, about 1–2 minutes.
- Add feta cheese and stir until incorporated. Mix in Parmesan if using.
- Remove from heat and let rest for 2 minutes to allow sauce to thicken further.
- Garnish with basil or parsley and serve warm.
