  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. In a mixing bowl, beat the softened cream cheese until completely smooth using a hand mixer or stand mixer.
  2. Mix in the fresh lemon juice, lemon zest, vanilla extract, and salt until well incorporated.
  3. Melt the white chocolate chips in a microwave-safe bowl in 20-30 second intervals, stirring between each, until smooth. Let it cool slightly.
  4. Pour the melted white chocolate into the cream cheese mixture and beat on low speed until fully blended into a thick, glossy, and creamy mixture.
  5. Cover the bowl and refrigerate for at least 2 hours, or until the mixture is firm enough to scoop and roll.
